Brupper.. Breakfast for Supper

 
 

As the title states, it’s Brupper-time, LOL!

A goofy name our kids came up with when I was explaining what brunch was.

“Well, then what’s it called when we have breakfast for supper??”

Brupper it is..

We kinda have brupper a lot around here. Busy days and an abundance of eggs equal easy suppers. Oops, I mean bruppers.

And of course, sausage or bacon is the perfect pairing.

Brupper isn’t always eggs. It can be pancakes or waffles too. But don’t forget our 100% pure Maple Syrup to go with that. I even dip my bacon in it!!

But for a super quick easy brupper, try egg casserole.

I don’t have any fancy pictures of this meal. We devoured it so fast I forgot until there were just a couple spoonfuls left.

Egg Casserole (Brupper)

  • 1 dozen Hoffman’s Little Acres Eggs (or 8-10 duck eggs)

  • 1 pound Hoffman’s Little Acres Sausage or Bacon

  • Splash of Hoffman’s Little Acres Raw Milk or Kefir

  • Salt/pepper to taste

  • 1-2 Green onions chopped

  • 2 cups Cheddar Cheese (or whatever cheese you have on hand)



  1. Pre-heat oven to 350

  2. Brown Ground sausage until no longer pink, breaking up chunks while it cooks. Or cook bacon and crumble. Set aside.

  3. Crack all the eggs in a bowl. Mix thoroughly with a whisk.

  4. Add milk and whisk again

  5. Then stir in the remaining ingredients, including meat.

  6. Pour into a greased 9x13 glass pan.

  7. Bake for 20 to 30 minutes, until lightly browned. It will set up more after it’s taken out of the oven.

    *In the last 5 minutes you can add more cheese to the top because you can never have too much cheese!

Notes

You can make this however your family likes it.. leave out the meat for lenten Fridays, add some chopped green or red peppers, diced potatoes, frozen shredded hash browns, so many options!
